Okay, for those who asked for the Parmesan meatloaf recipe, here it is:
Parmesan Meat Loaf
Combine 1 1/2 pounds ground beef, 1 large egg, 1 grated onion, 1/2 cup chopped flat-leaf parsley, 1/2 cup bread crumbs, 1/2 cup grated Parmesan, 1/4 cup tomato paste; season with salt and pepper. On a foil-lined baking sheet, form the mixture into an 8-inch loaf. Bake at 400ยบ F until cooked through, 40 to 50 minutes.
Okay, I made a few adjustments and it turned out PERFECT. The best meatloaf I’ve ever made: First off, I totally forgot to add the egg, but it didn’t seem to make a difference (not dry). Maybe because I used that 93% Lean ground beef (which tasted ‘smoother’ than the other kind). I used Progresso brand Garlic & Herb bread crumbs, DiGiorno brand parmesan, Hunt’s tomato paste (one small can is roughly 1/4…fyi) and instead of grating an onion, I used (more…)
